What saaru is to South, Matar Ke Chaawal is to North – especially Dilli. I love the biryaani way of cooking rice that emphasizes cooking in open pan and soaking rice for 30 min or more to enable endosmosis and make rice look, what my mom says “khile khile chaawal”. And as I write this, Chicago memories flock back yet again {best of times- how can one forget}. So, sometime in March 2009, I was in rush to prepare dinner as we had plans to give Chinta a midnight Birthday surprise @918 Claremont..And, I call up mummy asking for a fast recipe..something which I could prepare in less than 40 minutes. And !*#bingo! this is what she suggested..

  • Preparation Time: 20 – 25 min rice soak
  • Cooking Time: 10 mins

  • Cuisine: North Indian
  • 1 tbsp ghee
  • 2 cups soaked rice
  • 1 cup peas
  • Jeera or Cumin seeds
  • 2-3 Green chillies chopped
  • Ginger shredded
  • 1 tsp tumeric
  • Pinch of hing or asafoetida
  • 2 tsp Red chilly powder
  • 1 tsp Garam Masala
  • Salt to taste
  • Half Lemon
  • Coriander leaves
  • Defrost peas in microwave if using refrigerated peas
  • In an open bhagona or pan add ghee, followed by jeera and hing
  • After jeera stops sputtering, add chillies, shredded ginger and turmeric
  • Next add peas, red chilly powder and squeeze fresh lemon
  • Add soaked rice and enough water to submerge the rice and a bit more
  • Add coriander leaves, garam masala and salt to taste
  • After most of the water evaporates, lid the pan and sim the burner

This has been one of my rescue recipes forever now..I just make sure I am never out of peas.. Serve Matar Ke Chaawal with dahi and /or hari chutney. Happy Cooking Folks..!! And yes, I am between releases and have some ample time to put 2 posts in a day 😀

Mad Notes:
  • Placing the lid helps in cooking rice faster
  • When near completion, sim the burner as it prevents rice from drying up and becoming hard.
  • Also, check the rice grain time to time to test if rice is cooked properly.
  • Substitute aloo instead of peas to make Aloo ke Chaawal
