Time is a cycle (Kalchakra) that keeps getting back at you and makes you do things which you never thought you will ever do. For instance, as a child I never liked home-made curds and always sought the ones available in marts such as Amul curds, etc. Now tides have turned and I long for home made yogurts only. Vidhaata yeh kaisi hai vidambana..:P  As an adult, I found out that it is really easy to make them at home, goes with Indian tradition of making curds at home, kifayati and saves you a trip to grocery store especially on lazy nights when you want to give cooking a pass by having simple curd rice only to realize you are out of curds.

Ingredients:
  • 1 large glass of milk (any kind 2% or whole)
  • 1 tbsp of jaaman or starter yogurt
Method:
  • In a pan, add milk and bring it to a boil and keep aside
  • Let the milk completely to room temperature
  • Take jaaman or starter yogurt and put it in a bowl or container in which you want the curd to set
  • Add the milk to this and mix it with a spoon
  • Place this container under the unused oven overnight
  • After curd is set, refrigerate it for use

  • Instead of boiling milk on stove, you can also microwave milk
  • Curds can be refrigerated and used up to a week
