This is one of the most popular way of making Shimla Mirch or Bell Peppers in the Indian way. With this you get to combine the best of potato and pepper love in one as spicy mashed aloo mix cooked inside a pepper makes you crave for more.

Ingredients:
  • 2 potato
  • 2 small shimla mirch or bell peppers
  • 1 tsp cooking oil
  • Pinch of hing or asafoetida
  • 1 tsp red chilly powder
  • 1 tsp of chat masala (optional)
  • 1/2 tsp of lemon
  • Salt to taste
Method:
  • Boil potato in a cooker and let it cool
  • Mash boiled potato and add hing, red powder, salt, chat masala and bit lemon. Keep the mix aside
  • Use shimla mirch and make a hole in the middle and remove all the seeds, keeping the pepper intact
  • Now stuff the emptied shimla mirch with mashed potato mix
  • Heat oil in a kadhai or pan and place the stuffed shimla mirch
  • Cook on low flame for 10-15 min until mirch softens and aloo is done

Eat hot with phulka or parantha.

Mad Notes:
  • You may choose to horizontally cut several layers of stuffed mirch to help cook aloo evenly
